Carmen's began as a small bakery on Concession Street 32 years ago. Over the years it has made a name for itself in the catering industry in Southern Ontario.

Carmen's Banquet and Convention Centre opened a specialty retail outlet yesterday at its rear entrance, 1520 Stone Church Rd. E. (905-574-5855)

Carmen's will also be launching Mama Yolanda's Gourmet Lasagna. The lasagna is delicious, nutritionally healthy and light in texture, according to Carmen's.

It comes in Bolognese, Vegetarian with Ricotta and Spinach, Cajun Chicken Bolognese and Italian Sausage Bolognese.

Spectator staff had a chance to sample all of the flavours last week during a fundraiser, with excellent reviews of all of the flavours.

The Cajun chicken bites back, leaving you with a little heat in the back of your throat.

The Spinach and Ricotta went quickly, as well as the Italian Sausage and Bolognese.

The lunch special Tuesday to Sunday is $5 at Carmen's, which includes a 10-ounce piece of fresh-made Lasagna Bolognese with fresh-baked dinner roll and a drink.

You can buy a full 14-pound pan for $45, which serves 24 to 30. An introductory offer of a half pan (six pounds), which serves nine to 12, is $22.50.
